Ingredients
Prep
- 1 small yellow onion
- 2 medium zucchini
- 1 T olive oil
- 1 lb fresh green beans
- 4 t minced garlic
- 1 lemon
- 1/2 C bunch fresh parsley
- 2 T dried dill
- 1 T dried cilantro
- 6 cod filets
- salt and pepper to taste
On Cooking Day
- 6 dinner rolls
Instructions
To Assemble
- Thinly slice onion, chop zucchini, and add to a large zipper bag with the next 2 ingredients and half of the garlic.
- Juice and zest the lemon and place in a bowl with remaining garlic, parsley, dill, and cilantro.
- In a separate bag, Place cod in large zipper bag. Drizzle sauce over fish. Salt and pepper to taste.
To Cook
- Add fish and veggies to large sheet pan.
- Bake at 400 for 15-20 minutes, or until fish is flaky.
- Serve with dinner rolls
