Keto Low Carb One Pan Chicken and Veggies
We have started eat Keto and low carb lately and this Keto low carb one pan chicken and veggies was a hit. This meal gets its healthy fats from the pesto. The learning curve for Keto has been realizing that not all fats are created equal. Chicken thighs instead of breasts was another way to add in some healthy fats. If you can find skin on, then use those. The skin is healthy fat.
If you are new to Keto, do not let the fat scare you. Google the benefits of the Ketogenic diet. It is the way our ancestors ate. Kinda like a modified Paleo. Less protein, more fat. I like to eat somewhere in between Keto and Paleo myself. The tomatoes in this count towards my carbs for the day.
Simple clean ingredients (like all our recipes). Always real ingredients in our meal plans. Pile them all in a baggie or bowl if that is how your like to roll.
Zip and shake, shake, shake it up.
When ready to cook, pour onto a pan…that is singular….ONE PAN! Only one pan!! Whoo HOO!
Put in the oven, set a timer and walk away. No slaving over a hot stove, something you will never do with my meal plans. It’s against the law…..or it should be at least.
Of course you can separate things out a bit if you have non food touch-er eaters in your house. Get the kids to help make this and they won’t be so afraid of the green stuff on their food. Teach them what it is and have them scoop it from the jar into the bag. Let them shake it up. The more kids are involved with cooking, the more open they are to trying new things.
Now this is the right kind of fat to feed your family. Stay away from the deep fried stuff. That it is bad fat. If your ancestors didn’t eat it, you shouldn’t either.
I topped mine with some crumbled goat cheese because goat cheese and pesto are a great team, plus it ups the fat ratio and gives it some tang. Feta would be good too.

Servings: 4-6 |
Ingredients
- 5 boneless chicken thighs
- 16 oz frozen whole green beans
- 1 pint cherry tomatoes
- 3/4 C pesto sauce jarred
- 2 T goat cheese optional
Instructions
- Cut chicken thighs into 1 inch strips and place in large zipper bag.
- Add remaining ingredients to chicken. Zip and squish to mix really well.
- Pour chicken mixture onto baking sheet sprayed with non stick spray.
- Bake 20-30 minutes 400 degrees until chicken is cooked through.
