Slow Cooked Chicken Fajitas
The marinade for the slow cooked chicken fajitas combines the flavors of chili powder, lime juice, cumin, garlic, and just a hint of cayenne pepper for a little kick! Ingredients Needed:
- Chicken tenderloins
- Bell pepper
- Onion
- Diced tomatoes
- Chili powder
- Lime juice
- Ground cumin
- Minced garlic
- Cayenne pepper
- Flour tortillas
- Rice steamer and pinto beans for sides
How to Assemble Slow Cooked Chicken Fajitas
To make these slow cooker chicken fajitas easy to throw in the crockpot on a busy day, assemble the ingredients together ahead of time. Firstly, slice the onion and bell pepper into thin slices. Next, add the onions and peppers and chicken tenderloins to a large zipper bag. Now, don’t freak out about the chicken and veggies being stored together because it is all getting cook!
After that, it’s time to add all of the flavor! Add the diced tomatoes to the bag. There is no need to drain because you want that extra flavor in these slow cooked chicken fajitas.
Lastly, add the chili powder, lime juice, cumin, garlic, and cayenne pepper to the bag. In case your family does not handle spice, feel free to leave out the cayenne pepper.
Now that everything is added to the bag, it’s time to give it a good shake! Zip up the bag and shake it around to mix up all of the flavors. If you have kids, let them do this part because they will love it!
How to Cook Slow Cooked Chicken Fajitas
The best part of assembling these slow cooked chicken fajitas ahead of time is that you literally only have to do one thing to get it started: dump it in the slow cooker! Now that is my kind of dinner!
To cook the slow cooked chicken fajitas, set the slow cooker to low for 4-6 hours. If you have a newer slow cooker, be aware that some brands do tend to cook hotter than the older crockpots. Be sure to check it sooner if you know yours cooks on the hot side.
Once cooked, dice up the chicken and serve over flour tortillas with fajita toppings. While dinner is still cooking, you can make pinto beans and rice to serve along with it. Dinner is served!

Ingredients
- 18 chicken tenders
- 2 bell peppers any color
- 1 red onion
- 15 oz can diced tomatoes or Rotel
- 1 T chili powder
- 1 T lime juice
- 1/4 t ground cumin
- 1 t minced garlic
- salt and pepper to taste
- cayenne pepper (to taste)
- 12 flour tortillas fajita size
- 2 bags frozen rice steamers
- 15 oz can pinto beans
- Fajita toppings optional
Instructions
- Add chicken tenders to large zipper bag.
- Slice bell peppers and onion into thin slices and place in large zipper bag with chicken tenders.
- Add next 7 ingredients to the same zipper bag. Zip to seal and squish around to mix.
- Place chicken mixture in slow cooker and cook on low 4 - 6 hours.
- Cook rice and beans according to package directions.
- Serve with tortillas.
