Slow Cooked Chicken Fajitas – B
Rice and pinto beans

Ingredients

Prep
  • 18 chicken tenders
  • 2 bell peppers any color
  • 1 red onion
  • 15 oz can diced tomatoes or Rotel
  • 1 T chili powder
  • 1 T lime juice
  • 1/4 t ground cumin
  • 1 t minced garlic
  • salt and pepper to taste
  • cayenne pepper (to taste)
On Cooking Day
  • 12 flour tortillas fajita size
  • 2 bags frozen rice steamers
  • 15 oz can pinto beans
  • Fajita toppings optional

Instructions

To Assemble
  1. Add chicken tenders to large zipper bag.
  2. Slice bell peppers and onion into thin slices and place in large zipper bag with chicken tenders.
  3. Add next 7 ingredients to the same zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Place chicken mixture in slow cooker and cook on low 4 – 6 hours.
  2. Cook rice and beans according to package directions.
  3. Serve with tortillas.
