Slow Cooked Broccoli Cheese Soup!!
Does it get any better than broccoli cheese soup? The bonus….no processed junk in this soup! As a matter of fact, its ALL whole food ingredients. Don’t buy the canned stuff when the real thing is this easy.
Sooo super easy and whole foods! Did I say that already? I can see us having this once a week in the winter. What a great lunch to warm you up on a chilly day. Let it cook overnight and keep on warm til lunch time or pack it up and take it to work. OH YES!!
This recipe freezes well so triple batch prep this one so your freezer is always stocked with an easy slow cooker soup the whole family will love.

Servings: 4-6 |
Ingredients
Prep
- 16 bag broccoli florets
- 1 C grated carrots
- 1 C frozen chopped onion
- 2 t minced garlic
- 8 ounces cream cheese
- 1 t oregano
On Cooking Day
- 3 C chicken broth
- 1 can evaporated milk
- 1 C shredded cheddar cheese
- 6 C salad greens
Instructions
To Assemble
- add all ingredients to large zipper bag (if prepping ahead) or slow cooker.
To Cook
- Pour broccoli mixture into slow cooker. Add chicken broth.
- Cook on low 8-10 hours.
- Stir and add shredded cheese and evaporated milk and cook 30 minutes on high. Stirring occasionally.
- Blend with blender or immersion blender until desired creaminess.
- Serve with salad.
