Ingredients
Prep
- 6 flounder fillets
- 1 pint cherry tomatoes
- 4 T olive oil
- 2 t thyme
- salt and pepper to taste
- 1/2 C grated Parmesan
- 1/2 C panko bread crumbs
- 2 T olive oil
On Cooking Day
- 6 C salad greens
- 2 bag frozen brown rice steamers
Instructions
To Assemble
- Add fish and tomatoes to a large zipper bag. Add olive oil and next 2 ingredients, zip to seal and gently shake to mix.
- Combine cheese, panko bread crumbs, and remaining olive oil in bowl with lid.
To Cook
- Fold each flounder filet in half (lengthwise) and place on a large baking dish sprayed with non stick spray with tomatoes. Sprinkle cheese mixture on top of fish.
- Bake in a 425 degree oven for 15-20 minutes or until flounder flakes easily with a fork.
- Cook rice according to package directions. Serve with salad.
