Sheet Pan Flounder Parmesan- CE
salad greens and brown rice

Ingredients

Prep
  • 6 flounder fillets
  • 1 pint cherry tomatoes
  • 4 T olive oil
  • 2 t thyme
  • salt and pepper to taste
  • 1/2 C grated Parmesan
  • 1/2 C panko bread crumbs
  • 2 T olive oil
On Cooking Day
  • 6 C salad greens
  • 2 bag frozen brown rice steamers

Instructions

To Assemble
  1. Add fish and tomatoes to a large zipper bag. Add olive oil and next 2 ingredients, zip to seal and gently shake to mix.
  2. Combine cheese, panko bread crumbs, and remaining olive oil in bowl with lid.
To Cook
  1. Fold each flounder filet in half (lengthwise) and place on a large baking dish sprayed with non stick spray with tomatoes. Sprinkle cheese mixture on top of fish.
  2. Bake in a 425 degree oven for 15-20 minutes or until flounder flakes easily with a fork.
  3. Cook rice according to package directions. Serve with salad.

Recipe alternative: use chicken breasts and grill until cooked through.
