Sheet Pan Chicken Sausage and Roasted Veggies - W30

Servings: 6

Ingredients

Prep
  • 24 oz chicken sausage 2 12oz packages such as Aidell's
  • 2 sweet potato or 1 large
  • 1 bell pepper
  • 1 red onion
  • 2 C broccoli florets
  • 3 T olive oil
  • 1 T minced garlic
  • 1 T Italian seasoning
  • salt and pepper to taste
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Slice sausage into 1 inch pieces. Place in large zipper bag. Peel and cut sweet potatoes into bite size cubes and add to bag with sausage.
  2. Chop bell pepper and red onion and add to same bag along with broccoli.
  3. Add the next 3 ingredients into the zipper bag. Season with salt and pepper. Zip to seal and squish around to mix.
To Cook
  1. Pour sausage mixture onto baking sheet lined with foil and sprayed with non stick spray. Bake at 400 degrees 20 - 25 minutes.
  2. Serve with green salad.

Make sure you use Whole30 compliant chicken sausage such as Aidell's. Check labels for to make sure there is no added sugar or preservatives.
