Ingredients
Prep
- 2 lbs cod
- 2 cucumbers
- 30 oz canned white beans
- 1/2 C frozen chopped onion
- 1/2 t paprika
- 1/3 C white wine vinegar
- 4 T olive oil
- salt and pepper to taste
On Cooking Day
- 2 T lemon juice
- 12 oz frozen cut okra
Instructions
To Assemble
- Place fish in large zipper bag with half the olive oil. Season with salt and pepper, zip to seal.
- Dice cucumbers and drain and rinse beans. Place in separate large zipper bag.
- Add remaining ingredients. Zip to seal and squish to mix.
To Cook
- Heat oil in a large skillet on stove. Add fish and half of the lemon juice and cook 5-7 minutes on each side (depending on thickness).
- Sprinkle remaining lemon juice over fish just prior to serving. Serve with cucumber bean salsa.
