Pan Fried Fish with Cucumber, Bean Salsa- CE

Ingredients

Prep
  • 2 lbs cod
  • 2 cucumbers
  • 30 oz canned white beans
  • 1/2 C frozen chopped onion
  • 1/2 t paprika
  • 1/3 C white wine vinegar
  • 4 T olive oil
  • salt and pepper to taste
On Cooking Day
  • 2 T lemon juice
  • 12 oz frozen cut okra

Instructions

To Assemble
  1. Place fish in large zipper bag with half the olive oil. Season with salt and pepper, zip to seal.
  2. Dice cucumbers and drain and rinse beans. Place in separate large zipper bag.
  3. Add remaining ingredients. Zip to seal and squish to mix.
To Cook
  1. Heat oil in a large skillet on stove. Add fish and half of the lemon juice and cook 5-7 minutes on each side (depending on thickness).
  2. Sprinkle remaining lemon juice over fish just prior to serving. Serve with cucumber bean salsa.
