Ingredients
Prep
- 1 bunch baby kale
- 1/2 C onion
- 1 lb smoked sausage
- 8 oz fresh sliced mushrooms
- 1 lb gnocchi refrigerated, frozen or shelf stable
- 2 T butter
- 2 T olive oil
- 2 t Italian seasoning
- salt and pepper to taste
On Cooking Day
- 1/4 C shredded Parmesan

To Assemble
- Rough chop kale, dice onion, and slice sausage into 1" pieces. Place in a large zipper bag with remaining ingredients. Zip to seal and squish to mix.
To Cook
- Place sausage and gnocchi mix onto a large baking sheet sprayed with non stick spray. It will be very full but the kale will cook down.
- Roast at 425 degrees for 25 minutes, stirring and spreading everything back out in a single layer halfway through. Check that the gnocchi have plumped up, and that the veggies are nicely roasted.
- Sprinkle with parmesan cheese before serving.
