Ingredients
Prep
- 1/2 C olive oil
- 6 T mayonnaise
- 1/2 C freshly chopped basil
- salt and pepper to taste
- 2 T red wine vinegar
- 2 canned tuna
- 1 pint cherry tomatoes
- 1 cucumber
- 15 oz can chickpeas
On Cooking Day
- 1 head Romaine lettuce
- 1 pkg dinner rolls optional
Instructions
To Assemble
- Whisk first 5 ingredients in a container with a lid. This will be the dressing.
- Drain and rinse beans and add to a container with lid along with drained tuna.
- Chop cucumber and tomatoes and add to same container.
To Cook
- Toss greens with tuna and bean mixture. Add in dressing and gently toss to coat.
- Serve with dinner rolls.
