Herbed Tuna Salad – CE

Ingredients

Prep
  • 1/2 C olive oil
  • 6 T mayonnaise
  • 1/2 C freshly chopped basil
  • salt and pepper to taste
  • 2 T red wine vinegar
  • 2 canned tuna
  • 1 pint cherry tomatoes
  • 1 cucumber
  • 15 oz can chickpeas
On Cooking Day
  • 1 head Romaine lettuce
  • 1 pkg dinner rolls optional

Instructions

To Assemble
  1. Whisk first 5 ingredients in a container with a lid. This will be the dressing.
  2. Drain and rinse beans and add to a container with lid along with drained tuna.
  3. Chop cucumber and tomatoes and add to same container.
To Cook
  1. Toss greens with tuna and bean mixture. Add in dressing and gently toss to coat.
  2. Serve with dinner rolls.
