Ingredients
Prep
- 2 sweet potatoes
- 2 T olive oil
- 2 T minced garlic
- 1 T curry powder
- 1 T ground turmeric
- 1 t garam masala
- 1 t ground coriander
- 4 C cauliflower rice
- salt and pepper to taste
On Cooking Day
- 4 C vegetable broth
- 1 lime
- 8 oz canned coconut milk full fat
- 8 C salad greens
Instructions
To Assemble
- Peel and chop sweet potatoes and add to large zipper bag with remaining ingredients.
To Cook
- Pour bag contents into slow cooker with broth and cook on low for 6-8 hours.
- Blend with immersion blender and add coconut milk and squeeze of lime.
- Serve with salad.
