Curry Sweet Potato Cauliflower Soup – MD

Ingredients

Prep
  • 2 sweet potatoes
  • 2 T olive oil
  • 2 T minced garlic
  • 1 T curry powder
  • 1 T ground turmeric
  • 1 t garam masala
  • 1 t ground coriander
  • 4 C cauliflower rice
  • salt and pepper to taste
On Cooking Day
  • 4 C vegetable broth
  • 1 lime
  • 8 oz canned coconut milk full fat
  • 8 C salad greens

Instructions

To Assemble
  1. Peel and chop sweet potatoes and add to large zipper bag with remaining ingredients.
To Cook
  1. Pour bag contents into slow cooker with broth and cook on low for 6-8 hours.
  2. Blend with immersion blender and add coconut milk and squeeze of lime.
  3. Serve with salad.
