One Pan Roasted Sausage Peppers and Onions
This One Pan Roasted Sausage Peppers and Onions is one of those recipes that EVERYONE loves. Yes, some pick around the peppers and onions but they absolutely LOVE the sausage! Toss some chopped zucchini on the pan if your crew likes that better. This dish is one I have to double every time I make it because we all want leftovers the next day for lunch.
This is one of the customer all time favorite recipes and we include it on the menu often because it is so heavily requested. Yep, it is that good!
What all is in this one pan dinner?
- 2 pounds of smoked sausage
- 2 bell peppers [any color but we like red, yellow and or green]
- 1 onion
- 2 Tablespoons of balsamic vinegar
- 2 Tablespoons of spicy brown mustard
- 1 teaspoon of dried Italian seasoning
- salt and pepper to taste
I use uncured sausage so it is a bit healthier and it works just fine. Just toss it in a bag, mix it all together and dump it in on a sheet pan. Throw it in the oven and in a matter of minutes. Dinner is ready.
This one pan dish is so easy and such a staple around our house. We keep the ingredients to this recipe on hand at all times. And so will you!!
Servings: 4-6 |
Ingredients
- 2 lbs smoked sausage
- 2 bell peppers
- 1 onion
- 2 T balsamic vinegar
- 2 T spicy brown mustard
- 1 t dried Italian seasoning
- salt and pepper to taste
- 6 C salad greens
- 2 bags frozen mashed potato steamer
Instructions
- Slice sausage into 1 inch pieces. Place in large zipper bag.
- Slice peppers and onion into bite size pieces. Add to zipper bag.
- Add the next 3 ingredients into the zipper bag. Sprinkle with salt and pepper. Zip to seal and squish around to mix.
- Pour sausage mixture onto baking sheet lined with foil and sprayed with non stick spray. Bake at 400 degrees 20 - 25 minutes.
- Cook potatoes according to package directions. Serve with green salad.
