One Pan Sausage with Zucchini and Onions

One pan alert!!  I know you love these as much as I do, so here is another family favorite.  Easy, one pan Sausage Zucchini and Onions!! Eat on paper plates tonight!  I give you permission.

We added some mashed potatoes of the steamer frozen kind so only one more dish got dirty. Feel free to make a big ole mess in your kitchen and make homemade mashed potatoes.  I won’t stop you.  God bless America and the freedom to choose our method of making mashed potatoes.

Chop up all your ingredients.

Uncooked sliced sausage on a cutting board, a bowl of diced zucchini, with petite tomatoes and chopped onions.

Toss it all in the big bowl, large zipper bag or right on the baking sheet.

Just an FYI  –

*disclaimer: I usually mix all this in a large zipper baggie instead of a big bowl.  For video sake, I tossed in the big bowl this time.  Not everyone understands my make ahead meal plan method and the baggies can cause quite the controversy on video. Who knew?  You also, will not have all the dishes to hold all the cut ingredients so you will have far less to wash than I did. Oh the things I do for my readers. Dishes….lots of dishes. :)

Pour onto baking sheet.  Get the one I use HERE. I love it.  I use it at least 4 times a week and it does get rusty and gross like the cheap ones.

Broil for 10-12 minutes.  Stay close and check it half way to make sure your not making sausage flambe’ for dinner. That is not what we are going for here.

10 minutes y’all!  10 MINUTES!  Now, can you drive to get fast food and back home in 10 minutes?  And do you still want to?

We never have leftovers when we make sausage. But don’t fret, I buy the uncured and nitrite free kind.  No guilt!

Servings: 4-6

Ingredients

Prep
  • 2 lbs smoked sausage
  • 2 zucchini
  • 1 onion
  • 1 pint cherry tomatoes
  • 2 T olive oil
  • 1 t dried oregano
  • salt and pepper to taste
On Cooking Day
  • 1 bag frozen mashed potato steamer

Instructions

To Assemble
  1. Slice sausage into bite size pieces and place in large zipper bag or bowl.
  2. Chop zucchini into bite size pieces and add to sausage.
  3. Chop onion into rings and add to sausage mix.
  4. Add next 4 ingredients and mix well.
To Cook
  1. Pour sausage mixture onto baking sheet. Broil for 10-12 minutes or until desired doneness.
  2. Cook mashed potatoes according to package directions.
