Cheesy beef tortellini is a super easy prep-ahead meal, perfect for tossing in the slow cooker on a busy day! It took me about 60 seconds to get dinner in the slow cooker (because I prepped ahead).
Cheesy Beef Tortellini
During the busy school year, slow cooker meals are essential for making dinners a breeze. This cheesy beef tortellini uses stew meat, paired with a creamy tomato sauce, and of course, tortellini. Not only is it tasty, but so easy and perfect for those busy weeknights!
Ingredients Needed for Cheesy Beef Tortellini:
- Stew meat
- Frozen chopped onion
- Canned diced tomatoes
- Cream cheese (optional)
- Cheese filled tortellini
- Mozzarella cheese
How to Prep Cheesy Beef Tortellini
In order to save time on cooking day, prep this cheesy beef tortellini ahead of time. If you do, it will only take you a minute to put it in the slow cooker on cooking day!
Firstly, add the stew meat, frozen chopped onion, and canned tomatoes to a large zipper bag (or container). If you already have fresh onions on hand, go ahead and use those up!
Afterwards, add the seasonings, which are the oregano and basil. I would also give a good layer of salt and pepper. Lastly, add cream cheese to the bag, then zip to seal and toss around to mix everything together. The cream cheese is optional, but it adds a little creamy texture to the dish, so I would give it a try!
How to Cook Cheesy Beef Tortellini

Cook on low for 6-8 hours.
During the last 20-30 minutes of cook time, add the cheese tortellini and mozzarella cheese.
Pair the cheesy beef tortellini with some crusty bread and green salad and dinner is served!

- 1 pound lean stew meat
- 1 C frozen chopped onion
- 3 cans canned diced tomatoes I used fire roasted
- 1/2 t oregano
- 1/2 t basil
- 2 ounces cream cheese optional
- 9 ounces cheese filled tortellini
- 1 C shredded mozzarella cheese
- 6 C salad greens
- Add all ingredients to a large zipper bag and zip to seal or add all ingredients under "prep" to the slow cooker if cooking today.
- Pour meat mixture into slow cooker and cook on low for 6-8 hours or high 4 hours.
- Add tortellini and cheese and mix well. Cook another 20-30 minutes on high.
- Serve with salad.
