These slow cooker chicken legs are coated in a spice rub and cooked along with carrots and potatoes. In addition, it is all cooked in the slow cooker. So not only is it a complete meal in one pot, but you do not have to heat up the kitchen!

Dark meat not only adds a lot of flavor, in comparison with white meat, but it tends to hold up better in the slow cooker. White meat tends to dry out quicker in the slow cooker, so if you have had trouble with dry chicken in the past, try out the slow cooker chicken legs.

- Onion powder
- Dried thyme
- Garlic powder
- New potatoes
- Baby carrots
How to Prep Slow Cooker Chicken Legs

To begin, add the seasonings, paprika, chili powder, dried thyme, and garlic powder, to a small bowl and mix. After that, evenly coat the chicken legs with the seasoning blend. Once this is done, that is all to the prep!
How to Cook Slow Cooker Chicken Legs
Once you are ready to cook the slow cooker chicken legs, add the potatoes and baby carrots to the bottom of the crockpot. Next add a layer of salt and pepper, and then add the chicken legs.
Cook on low for 6-8 hours. As always, you know your slow cooker, so if it tends to cook on the hot side (like a lot of the newer ones), decrease the time a little.
If you like crispy skin on your chicken legs, then put these under the broiler for a few minutes once they are finished cooking. Also, add some freshly grated Parmesan cheese to the potatoes after they are finished to add that extra touch of flavor.

Ingredients
- 4 lbs chicken legs skinned if desired
- 1 T paprika
- 2 t chili powder
- 1 t onion powder
- 1 t dried thyme
- 1/2 t garlic powder
- salt and pepper to taste
- 6 new potatoes
- 1 bag baby carrots
- 1/2 C grated Parmesan cheese optional
Instructions
- Add first 7 ingredients to large zipper bag. Zip to seal and shake to mix well.
- Add potatoes and carrots to slow cooker. Place drumsticks on top of vegetables and cook on low for 6 - 8 hours.
- To serve, mash potatoes with a spatula and add shredded parmesan cheese.
- Serve chicken with potatoes and carrots.
