This mixture would also make great burrito filling or nachos…yes, nachos! Pile on the cheese! Be sure to use a slotted spoon if using for nachos as to not make them soggy. So many great variations of this creamy southwest chicken can be used to make several amazingly easy dinners.
This recipe freezes beautifully too. So make 2, 3 or 4 of them all at once and toss in the fridge for later. It only takes about 5 more minutes to make 4 as it does 1 so get an assembly line going and crank a few freezer meals out in about 15 minutes!
Servings: 4-6 |
Ingredients
- 4 chicken breast
- 15 oz canned black beans
- 1 1/2 cup frozen corn
- 15 oz mild salsa jar
- 6 oz light cream cheese
- 2 bag frozen rice steamers
- 16 oz frozen green beans
Instructions
- Place all ingredients in a large zipper bag.
- Pour chicken mixture into slow cooker. Cook on low for 6-8 hours. Add 6 oz light cream cheese the last 20-30 minutes of cook time.
- Shred chicken with two forks before serving
- Cook rice and green beans according to package directions.
