I love to grill quesadillas quickly on my favorite indoor grill.
Shrimp Quesadillas Your Family Will Love
Just look at that picture!! I can taste them now!! Get in my belly!!!
If your family is not on the “seafood” band wagon, then you can easily swap the shrimp for cooked chicken or beef. Simple as that. Change it up to your liking.
My family happens to love anything shrimp-y so these Shrimp Quesadillas are a hit at my house.
Ingredients
Prep
- 1 lb medium cooked shrimp peeled & tail off
- 1 T fajita seasoning
- 2 C Monterrey Jack cheese
On Cooking Day
- 2 avocados
- 1 bag chips
- 1 jar salsa
- 1 pkg flour tortillas
- 1 T canola oil
Instructions
To Assemble
- Mix all ingredients in large zipper bag. Zip to seal. Squish around to mix.
To Cook
- Scoop mixture evenly onto flour tortillas. Top with another tortilla. Brush with canola oil.
- Bake on large baking sheet sprayed with non stick spray in oven at 400 degrees for 15 minutes or grill on indoor grill.
- Slice avocado and serve with chips and salsa.
