So what exactly is shrimp ceviche? Shrimp ceviche is traditionally raw shrimp, combined with fresh herbs, onion, and lime juice. The lime juice actually “cooks” the shrimp. To put it together, you combine the marinade (the lime juice) and other fresh ingredients and let it sit for a few minutes until the shrimp turns opaque. - cooked shrimp – 1 lb
- lime juice – 1/2 cup
- cucumber
- 1/2 red onion
- jalapeno
- tomato
- large avocado
- 2 T fresh cilantro
- 1/4 t salt

Shrimp ceviche salad really only requires some chopping, making it an easy, quick dinner! So, bring out that cutting board and a good, sharp knife and start cutting! Chop, chop, chop and chop some more. Firstly, dice up the onion, tomato, cucumber, avocado, and jalapeño. If you don’t want the heat, be sure to take out the seeds from the jalapeño before chopping! After that, cut the shrimp into smaller pieces. Then, add it all to a big bowl.
After that, it’s time to add the shrimp ceviche flavor! Now mince the fresh cilantro and add it to the bowl. Lastly, add the lime juice and salt and give it another toss!
Stir, stir and stir some more. To store for later, cover and put it in the fridge.

- 1 pound cooked shrimp
- 1/2 cup lime juice
- 1 cucumber
- 1/2 red onion
- 1 jalepeno
- 1 tomato
- 1 large avocado
- 2 tbsp minced fresh cilantro leaves
- 1/4 tsp salt

- Chop shrimp, cucumber, onion, tomato, jalepeno, avocado and cilantro and add to large container with lid.
- Add salt and lime juice and mix well. Cover and refrigerate up to 24 hours.
