Ingredients
Prep
- 1/4 C olive oil
- 1/2 C fresh cilantro chopped
- 2 T lime juice
- 2 T minced garlic
- 1 t cumin
- salt and pepper to taste
- 6 cod filets
- 14 oz canned black beans
- 2 C frozen corn
- 8 oz sour cream
- 1 T lime juice
- 1 t minced garlic
- 1/4 t salt
On Cooking Day
- 2 bag frozen brown rice steamers
Instructions
To Assemble
- Mix first 6 ingredients (using half the cilantro) in a small bowl and set aside. This is the marinade.
- Add fish to a large zipper bag and pour half of lime marinade into bag. Zip and shake to mix.
- Rinse and drain black beans and add to medium bowl with lid along with corn and remaining marinade and mix well.
- Mix remaining cilantro and last 4 ingredients in a small bowl with lid. This will be the cream sauce.
To Cook
- Add fish to large baking sheet and broil for 7-9 minutes or until fish is cooked through.
- Cook rice according to package directions. Build bowls with rice, black bean mix and fish.
