Ingredients
Prep
- 6 russet potatoes
- 4 tomatoes
- 1 onion
- 1/2 bunch cilantro
- 3 C cooked cubed chicken
- 2 T olive oil
- 2 T lime juice
- 2 T taco seasoning
- salt and pepper to taste
On Cooking Day
- 10 C salad greens
- 2 avocados
- 2 C shredded cheddar cheese
- 1 C sour cream
Instructions
To Assemble
- Wrap each potato in foil and set aside.
- Chop the tomatoes, onion and cilantro and add to a medium bowl with lid.
- Add remaining ingredients to bowl and mix well and cover.
To Cook
- Place foil wrapped potatoes in slow cooker and cook on low for 8 hours.
- Chop avocados and add to chicken mixture, mix well. Cut open potatoes and pile on chicken mixture, tomato mixture, shredded cheese and sour cream.
- Serve with salad.
