Taco Stuffed Baked Potatoes – CE

Ingredients

Prep
  • 6 russet potatoes
  • 4 tomatoes
  • 1 onion
  • 1/2 bunch cilantro
  • 3 C cooked cubed chicken
  • 2 T olive oil
  • 2 T lime juice
  • 2 T taco seasoning
  • salt and pepper to taste
On Cooking Day
  • 10 C salad greens
  • 2 avocados
  • 2 C shredded cheddar cheese
  • 1 C sour cream

Instructions

To Assemble
  1. Wrap each potato in foil and set aside.
  2. Chop the tomatoes, onion and cilantro and add to a medium bowl with lid.
  3. Add remaining ingredients to bowl and mix well and cover.
To Cook
  1. Place foil wrapped potatoes in slow cooker and cook on low for 8 hours.
  2. Chop avocados and add to chicken mixture, mix well. Cut open potatoes and pile on chicken mixture, tomato mixture, shredded cheese and sour cream.
  3. Serve with salad.
