Ingredients
Prep
- 2 one pound pork tenderloins
- 2 T olive oil
- 2 t cumin
- salt and pepper to taste
- 2 bell peppers any color
- 1/2 bunch cilantro
- 4 C frozen corn
- 2 t chili powder
- 1 t lime juice
On Cooking Day
- 2 avocados
- 1 lime
- 1/4 C crumbled feta cheese
- 10 C salad greens
Instructions
To Assemble
- Add pork loins to large baking dish [make sure to leave space between them if using 2] sprayed with non stick spray. Coat with olive oil, cumin, salt and pepper.
- Slice bell peppers into bite size pieces and chop cilantro. Mix with corn, chili powder and lime juice then pour around pork in dish and cover.
To Cook
- Uncover and bake in a 400 degree oven for 25-35 minutes or until pork is cooked through and corn is slightly browned.
- Serve with sliced avocado, feta, squeeze of lime and side salad.
