Spiced Pork with Corn and Peppers – OP1

Ingredients

Prep
  • 2 one pound pork tenderloins
  • 2 T olive oil
  • 2 t cumin
  • salt and pepper to taste
  • 2 bell peppers any color
  • 1/2 bunch cilantro
  • 4 C frozen corn
  • 2 t chili powder
  • 1 t lime juice
On Cooking Day
  • 2 avocados
  • 1 lime
  • 1/4 C crumbled feta cheese
  • 10 C salad greens

Instructions

To Assemble
  1. Add pork loins to large baking dish [make sure to leave space between them if using 2] sprayed with non stick spray. Coat with olive oil, cumin, salt and pepper.
  2. Slice bell peppers into bite size pieces and chop cilantro. Mix with corn, chili powder and lime juice then pour around pork in dish and cover.
To Cook
  1. Uncover and bake in a 400 degree oven for 25-35 minutes or until pork is cooked through and corn is slightly browned.
  2. Serve with sliced avocado, feta, squeeze of lime and side salad.
