Southwestern Tilapia - CE
Broccoli and rice

Ingredients

Prep
  • 6 tilapia fillets
  • 2 T olive oil
  • 1 T lime juice
  • 1 t garlic powder
  • 1 t chili powder
  • 1 t sea salt
  • 1/2 t pepper
  • 1/4 t cayenne pepper
  • 1 bag broccoli florets
  • 1 T olive oil
  • salt and pepper to taste
On Cooking Day
  • 2 bag frozen rice steamer

Instructions

To Assemble
  1. Add first 8 ingredients to a large zipper bag. Zip and squish gently to mix.
  2. Add broccoli to another large zipper bag with olive oil, salt and pepper. Zip and shake to mix.
To Cook
  1. Place fish fillets and broccoli on a baking sheet sprayed with non stick spray and bake at 400 degrees 15 - 20 minutes until fish flakes easily with fork.
  2. Prepare rice according to package directions.

*Non seafood eaters, substitute with chicken breasts or steak of your choice.  May require longer cook time.
