Ingredients
Prep
- 1 1/2 lb stew meat
- 3 T chipotle in adobo
- 3 T minced garlic
- 2 T olive oil
- 2 t cumin
- 1 T chili powder
- 1 C frozen chopped onion
- 1 C frozen chopped bell pepper
On Cooking Day
- 2 C beef broth
- 1 bag steamers mashed potatoes
- 2 C shredded cheddar cheese
- 1/2 C sour cream
- 10 C salad greens
- 1/2 C sour cream
Instructions
To Assemble
- Add all ingredients to a large zipper bag. Zip and shake to mix. *use more or less chipotle in adobo as desired.
To Cook
- Pour beef broth and beef mixture into slow cooker and cook on low for 8 hours.
- Cook potatoes according to package directions and mix in cheese and half of the sour cream before serving. Pour spicy beef over cheesy potatoes an serve with a salad.
- If desired, drizzle with remaining sour cream over top of beef.
