Slow Cooked Spicy Beef N Cheddar Potatoes – CE

Ingredients

Prep
  • 1 1/2 lb stew meat
  • 3 T chipotle in adobo
  • 3 T minced garlic
  • 2 T olive oil
  • 2 t cumin
  • 1 T chili powder
  • 1 C frozen chopped onion
  • 1 C frozen chopped bell pepper
On Cooking Day
  • 2 C beef broth
  • 1 bag steamers mashed potatoes
  • 2 C shredded cheddar cheese
  • 1/2 C sour cream
  • 10 C salad greens
  • 1/2 C sour cream

Instructions

To Assemble
  1. Add all ingredients to a large zipper bag. Zip and shake to mix. *use more or less chipotle in adobo as desired.
To Cook
  1. Pour beef broth and beef mixture into slow cooker and cook on low for 8 hours.
  2. Cook potatoes according to package directions and mix in cheese and half of the sour cream before serving. Pour spicy beef over cheesy potatoes an serve with a salad.
  3. If desired, drizzle with remaining sour cream over top of beef.
