Ingredients
Prep
- 4 gold potatoes
- 4 boneless chicken thighs or breasts
- 1/2 C salsa
- 1 t cumin
- 2 T olive oil
- 2 T lime juice
- 1 T minced garlic
- 1 t dried cilantro or 1/4 C fresh chopped
- salt and pepper to taste
On Cooking Day
- 32 oz chicken broth
- 2 C frozen corn
- 10 C salad greens
Instructions
To Assemble
- Chop potatoes and add to large zipper bag along with next 8 ingredients.
To Cook
- Pour chicken mixture into slow cooker. Add chicken broth and frozen corn. Mix and cook on low for 8 hours.
- Remove chicken and shred. Scoop out and blend half the soup or use an immersion blender to slightly blend to thicken soup. Return chicken, mix well.
- Serve with salad.
