Slow Cooked Salsa Chicken and Corn Chowder – CE

Ingredients

Prep
  • 4 gold potatoes
  • 4 boneless chicken thighs or breasts
  • 1/2 C salsa
  • 1 t cumin
  • 2 T olive oil
  • 2 T lime juice
  • 1 T minced garlic
  • 1 t dried cilantro or 1/4 C fresh chopped
  • salt and pepper to taste
On Cooking Day
  • 32 oz chicken broth
  • 2 C frozen corn
  • 10 C salad greens

Instructions

To Assemble
  1. Chop potatoes and add to large zipper bag along with next 8 ingredients.
To Cook
  1. Pour chicken mixture into slow cooker. Add chicken broth and frozen corn. Mix and cook on low for 8 hours.
  2. Remove chicken and shred. Scoop out and blend half the soup or use an immersion blender to slightly blend to thicken soup. Return chicken, mix well.
  3. Serve with salad.
