Ingredients
Prep
- 2 eggs
- 1/2 C milk
- 2/3 C Italian bread crumbs
- 2 T dry onion soup mix
- 1 1/2 lb extra lean ground beef 90/10 or turkey
- 1 disposable loaf pan to fit inside your slow cooker
- 1/4 C ketchup
- 2 T honey
- 1 t mustard
- 1 t Worcestershire sauce
- 1 lb baby carrots
- 1 bag baby potatoes
- 2 T olive oil
- salt and pepper to taste
On Cooking Day
- 6 C salad greens
Instructions
To Assemble
- Mix first 5 ingredients and place in a loaf pan that will fit into your slow cooker.
- Mix the next 4 ingredients (ketchup-Worcestershire) spread half over the meatloaf. Reserve half for serving.
- Add vegetables in olive oil, salt and pepper to a large zipper bag. Zip and shake.
To Cook
- Add meatloaf pan to slow cooker and pour vegetables around the pan. Cook on low for 6-8 hours.
- Serve with salad.
