Slow Cooked Meatloaf Dinner – C

Ingredients

Prep
  • 2 eggs
  • 1/2 C milk
  • 2/3 C Italian bread crumbs
  • 2 T dry onion soup mix
  • 1 1/2 lb extra lean ground beef 90/10 or turkey
  • 1 disposable loaf pan to fit inside your slow cooker
  • 1/4 C ketchup
  • 2 T honey
  • 1 t mustard
  • 1 t Worcestershire sauce
  • 1 lb baby carrots
  • 1 bag baby potatoes
  • 2 T olive oil
  • salt and pepper to taste
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Mix first 5 ingredients and place in a loaf pan that will fit into your slow cooker.
  2. Mix the next 4 ingredients (ketchup-Worcestershire) spread half over the meatloaf. Reserve half for serving.
  3. Add vegetables in olive oil, salt and pepper to a large zipper bag. Zip and shake.
To Cook
  1. Add meatloaf pan to slow cooker and pour vegetables around the pan. Cook on low for 6-8 hours.
  2. Serve with salad.
