Ingredients
Prep
- 1 bag frozen chopped onions
- 1/4 C lemon juice
- 2 T olive oil
- 2 T Dijon mustard
- 2 T minced garlic
- 1 t dried rosemary
- 1 t dried thyme
- salt and pepper to taste
- 3 lb Pork Roast or tenderloin
- 1 1/2 lb baby new potatoes
- 16 oz frozen chopped carrots
On Cooking Day
- 10 C salad greens
- 1/2 C chicken broth
Instructions
To Assemble
- Add first 8 ingredients in a large zipper bag. Squish to mix well.
- Add pork roast to bag. Zip and shake to coat pork with seasoning. Add potatoes and carrots to bag. Zip to seal.
To Cook
- Pour roast mixture into slow cooker along with chicken broth and cook on low for 7 hours.
- Serve with salad.
