Slow Cooked Herbed Pork Roast – CE

Ingredients

Prep
  • 1 bag frozen chopped onions
  • 1/4 C lemon juice
  • 2 T olive oil
  • 2 T Dijon mustard
  • 2 T minced garlic
  • 1 t dried rosemary
  • 1 t dried thyme
  • salt and pepper to taste
  • 3 lb Pork Roast or tenderloin
  • 1 1/2 lb baby new potatoes
  • 16 oz frozen chopped carrots
On Cooking Day
  • 10 C salad greens
  • 1/2 C chicken broth

Instructions

To Assemble
  1. Add first 8 ingredients in a large zipper bag. Squish to mix well.
  2. Add pork roast to bag. Zip and shake to coat pork with seasoning. Add potatoes and carrots to bag. Zip to seal.
To Cook
  1. Pour roast mixture into slow cooker along with chicken broth and cook on low for 7 hours.
  2. Serve with salad.
