Ingredients
Prep
- 1 C frozen chopped onions
- 28 oz diced tomatoes
- 1 T olive oil
- 1 t dried basil
- 1 lb extra lean ground beef 90/10
- 2 egg
- 2 t garlic powder
- 3 t dried oregano
- 2 t onion powder
- 1 t mustard powder
- salt and pepper to taste
On Cooking Day
- 1 1/2 C chicken broth
- 1/2 C heavy cream
- 10 C salad greens
Instructions
To Assemble
- Add first 4 ingredients to a blender and blend thick (slightly chunky) and add to bowl with lid.
- Mix last 7 ingredients in a large bowl and roll into 1 inch balls (use a small ice cream type scoop for quick balling). Store in a container with lid.
To Cook
- Add meatballs, tomato mixture and chicken broth to slow cooker. Cook on low for 6-8 hours. Pour in heavy cream 30 minutes before serving. Mix well.
- Serve with salad.
