Slow Cooked Creamy Tomato Meatball Soup – CE

Ingredients

Prep
  • 1 C frozen chopped onions
  • 28 oz diced tomatoes
  • 1 T olive oil
  • 1 t dried basil
  • 1 lb extra lean ground beef 90/10
  • 2 egg
  • 2 t garlic powder
  • 3 t dried oregano
  • 2 t onion powder
  • 1 t mustard powder
  • salt and pepper to taste
On Cooking Day
  • 1 1/2 C chicken broth
  • 1/2 C heavy cream
  • 10 C salad greens

Instructions

To Assemble
  1. Add first 4 ingredients to a blender and blend thick (slightly chunky) and add to bowl with lid.
  2. Mix last 7 ingredients in a large bowl and roll into 1 inch balls (use a small ice cream type scoop for quick balling). Store in a container with lid.
To Cook
  1. Add meatballs, tomato mixture and chicken broth to slow cooker. Cook on low for 6-8 hours. Pour in heavy cream 30 minutes before serving. Mix well.
  2. Serve with salad.
