Ingredients
Prep
- 3 boneless chicken breasts or thighs
- 2 T tomato paste
- 2 t minced garlic
- 2 t Cajun seasoning
- 1 C frozen chopped onions
- 1 C frozen chopped bell peppers
- 1 T olive oil
On Cooking Day
- 2 C brown rice uncooked
- 4 C chicken broth
- 6 C salad greens
Instructions
To Assemble
- Add all ingredients to large zipper bag. Zip and seal.
To Cook
- Add rice, chicken mixture and broth to slow cooker. Mix well and cook on low for 6-8 hours.
- Serve with green salad.
