Ingredients
Prep
- 2 lb flank steak
- 2 bell peppers any color
- 1 red onion
- 15 oz can diced tomatoes or Rotel
- 1 T chili powder
- 1 T lime juice
- 1/4 t ground cumin
- 1 t minced garlic
- salt and pepper to taste
- cayenne pepper to taste
On Cooking Day
- 12 flour tortillas fajita size
- 2 bag frozen brown rice steamers
- 15 oz can pinto beans
- Fajita toppings sour cream, shredded cheese, guacamole
Instructions
To Assemble
- Slice steak into 1/2 inch strips and add to large zipper bag.
- Slice bell peppers and onion into thin slices and place in large zipper bag with steak.
- Add next 7 ingredients to the same zipper bag. Zip to seal and squish around to mix.
To Cook
- Place steak mixture in slow cooker and cook on low 6-8 hours.
- Cook rice and beans according to package directions.
- Serve with tortillas.
