Slow Cooked Beef Fajitas – CE
Rice and pinto beans

Ingredients

Prep
  • 2 lb flank steak
  • 2 bell peppers any color
  • 1 red onion
  • 15 oz can diced tomatoes or Rotel
  • 1 T chili powder
  • 1 T lime juice
  • 1/4 t ground cumin
  • 1 t minced garlic
  • salt and pepper to taste
  • cayenne pepper to taste
On Cooking Day
  • 12 flour tortillas fajita size
  • 2 bag frozen brown rice steamers
  • 15 oz can pinto beans
  • Fajita toppings sour cream, shredded cheese, guacamole

Instructions

To Assemble
  1. Slice steak into 1/2 inch strips and add to large zipper bag.
  2. Slice bell peppers and onion into thin slices and place in large zipper bag with steak.
  3. Add next 7 ingredients to the same zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Place steak mixture in slow cooker and cook on low 6-8 hours.
  2. Cook rice and beans according to package directions.
  3. Serve with tortillas.
