Ingredients
Prep
- 1 1/2 onion
- 2 red bell pepper
- salt and pepper to taste
- 1/4 C extra-virgin olive oil
- 40 oz crushed tomatoes
- 8 t minced garlic
- 1 1/2 t cumin
- 2 t smoked paprika
- 1/2 t crushed red pepper
On Cooking Day
- 12 eggs
- salt and pepper to taste optional
- 1/4 C chopped fresh parsley optional
- 6 whole wheat pita
- 6 C green salad
Instructions
To Assemble
- Dice the onion and bell peppers into small pieces and add to a zipper bag. Add the next 2 ingredients to the bag.
- Add the next 2 ingredients to a large bowl with a lid. Stir to combine, and cover.
- In a small container with a lid, add the next 3 ingredients, and cover.
To Cook
- Heat a large saute pan or skillet with a lid over medium high heat. Add the vegetables and saute until they begin to soften about 3-5 minutes.
- Sprinkle in the seasoning mixture and stir to combine. Pour in the tomato mixture and bring to a simmer. Allow to simmer until sauce begins to thicken slightly, about 15 minutes.
- Make a little well in the sauce, and crack in an egg. Continue to do this around the pan until each egg has a spot in the pan. Cover and simmer for 10-15 minutes, or until eggs are set to your liking.
- Prior to serving sprinkle with salt and pepper and parsley as desired. Serve with salad and whole wheat pita.
