Ingredients
Prep
- 5 boneless chicken breasts
- 3 T olive oil
- 3 T minced garlic
- 1/2 t crushed red pepper flakes
- salt and pepper to taste
- 5 zucchini large
- 2 T olive oil
- 1 T minced garlic
On Cooking Day
- 8 C salad greens
- 6 whole wheat dinner rolls
- 1/4 C shredded Parmesan cheese
Instructions
To Assemble
- Cube chicken into bite size pieces and add to large zipper bag with next 4 ingredients. Shake to mix.
- Spiralize zucchini into "zoodles" and add to large zipper bag with next 2 ingredients.
To Cook
- Add chicken to large skillet and cook, turning until chicken is cooked through. Remove from pan and add zucchini zoodles and cook until warmed through.
- Serve chicken over zoodles. Sprinkle with parmesan cheese. Serve with salad and dinner rolls.
