Skillet Garlic Chicken Zoodles – CE

Prep
  • 5 boneless chicken breasts
  • 3 T olive oil
  • 3 T minced garlic
  • 1/2 t crushed red pepper flakes
  • salt and pepper to taste
  • 5 zucchini large
  • 2 T olive oil
  • 1 T minced garlic
On Cooking Day
  • 8 C salad greens
  • 6 whole wheat dinner rolls
  • 1/4 C shredded Parmesan cheese

Instructions

To Assemble
  1. Cube chicken into bite size pieces and add to large zipper bag with next 4 ingredients. Shake to mix.
  2. Spiralize zucchini into “zoodles” and add to large zipper bag with next 2 ingredients.
To Cook
  1. Add chicken to large skillet and cook, turning until chicken is cooked through. Remove from pan and add zucchini zoodles and cook until warmed through.
  2. Serve chicken over zoodles. Sprinkle with parmesan cheese. Serve with salad and dinner rolls.
