Ingredients
Prep
- 2 lb top sirloin or stir fry beef
- 1 lb asparagus
- 2 T liquid aminos or soy sauce
- 2 T minced garlic
- 3 T olive oil
- 1/2 t crushed red pepper flakes
- pepper to taste
On Cooking Day
- 1/2 C beef broth
- 1 T cornstarch
- 1/2 C cashews unsalted
- 2 bag steamers brown rice
- 10 C salad greens
Instructions
To Assemble
- Slice beef against the grain into thin strips and add to large zipper bag.
- Trim woody ends from asparagus and cut into 2 inch pieces. Add to another zipper bag.
- Mix last 5 ingredients in a small bowl. Pour most of it over beef and just a small amount over the asparagus. Zip bags and shake to mix.
To Cook
- Pour Beef into a hot skillet with olive oil. Stir fry until about half way done and add asparagus. Cook until beef is desired doneness. Remove from pan and keep warm.
- Mix broth and cornstarch in a small bowl and pour into hot pan with cashews. Simmer a few minutes to thicken and return beef and asparagus to pan. Mix well.
- Cook rice according to package directions. Serve with salad.
