Skillet Beef Stir Fry – CE

Ingredients

Prep
  • 2 lb top sirloin or stir fry beef
  • 1 lb asparagus
  • 2 T liquid aminos or soy sauce
  • 2 T minced garlic
  • 3 T olive oil
  • 1/2 t crushed red pepper flakes
  • pepper to taste
On Cooking Day
  • 1/2 C beef broth
  • 1 T cornstarch
  • 1/2 C cashews unsalted
  • 2 bag steamers brown rice
  • 10 C salad greens

Instructions

To Assemble
  1. Slice beef against the grain into thin strips and add to large zipper bag.
  2. Trim woody ends from asparagus and cut into 2 inch pieces. Add to another zipper bag.
  3. Mix last 5 ingredients in a small bowl. Pour most of it over beef and just a small amount over the asparagus. Zip bags and shake to mix.
To Cook
  1. Pour Beef into a hot skillet with olive oil. Stir fry until about half way done and add asparagus. Cook until beef is desired doneness. Remove from pan and keep warm.
  2. Mix broth and cornstarch in a small bowl and pour into hot pan with cashews. Simmer a few minutes to thicken and return beef and asparagus to pan. Mix well.
  3. Cook rice according to package directions. Serve with salad.
