Ingredients
Prep
- 6 boneless chicken breast
- 1/4 C olive oil
- 3 T lemon juice
- 4 t minced garlic
- 1 oz fresh tarragon or 2 t dried
- salt and pepper to taste
- 1 bunch asparagus
- 1 lemon
On Cooking Day
- 2 bag frozen steamers brown rice
Instructions
To Assemble
- Chop tarragon and trim woody ends from asparagus. Place first 7 ingredients in a large zipper bag. Zip and squish around to mix.
- Slice lemon in to rounds and place in a small container with lid.
To Cook
- Place chicken mixture on a sheet pan covered in foil and sprayed with non stick spray. Top with lemon rounds.
- Roast in a 450 degree oven for 30 minutes. Broil the last 3-5 minutes to brown chicken.
- Cook rice according to package directions.
