Sheet Pan Tarragon Chicken – CE
asparagus and rice

Ingredients

Prep
  • 6 boneless chicken breast
  • 1/4 C olive oil
  • 3 T lemon juice
  • 4 t minced garlic
  • 1 oz fresh tarragon or 2 t dried
  • salt and pepper to taste
  • 1 bunch asparagus
  • 1 lemon
On Cooking Day
  • 2 bag frozen steamers brown rice

Instructions

To Assemble
  1. Chop tarragon and trim woody ends from asparagus. Place first 7 ingredients in a large zipper bag. Zip and squish around to mix.
  2. Slice lemon in to rounds and place in a small container with lid.
To Cook
  1. Place chicken mixture on a sheet pan covered in foil and sprayed with non stick spray. Top with lemon rounds.
  2. Roast in a 450 degree oven for 30 minutes. Broil the last 3-5 minutes to brown chicken.
  3. Cook rice according to package directions.
