Ingredients
Prep
- 1 1/2 lb salmon filets
- 3 bell peppers any colors
- 1 purple onion
- 1/2 C cilantro
- 2 T olive oil
- 2 T lime juice
- 1 T chili powder
- 1/2 t garlic powder
- 1/2 t onion powder
- 1/2 t ground cumin
- 1 t paprika
On Cooking Day
- 2 avocados
- 12 flour tortillas or corn if desired
- 1/2 C salsa
- 1 bag tortilla chips
Instructions
To Assemble
- Chop salmon, peppers and onion into strips, rough chop cilantro and add to large zipper bag.
- Add next 7 ingredients to salmon and vegetables. Zip and shake well to mix.
To Cook
- Pour salmon mixture onto large rimmed baking sheet sprayed with non stick spray.
- Bake in a 425 degree oven for 8-12 minutes or until salmon is cooked through.
- Serve with flour tortillas, avocado, chips and salsa.
