Sheet Pan Salmon Fajitas – CE
avocado, chips & salsa

Ingredients

Prep
  • 1 1/2 lb salmon filets
  • 3 bell peppers any colors
  • 1 purple onion
  • 1/2 C cilantro
  • 2 T olive oil
  • 2 T lime juice
  • 1 T chili powder
  • 1/2 t garlic powder
  • 1/2 t onion powder
  • 1/2 t ground cumin
  • 1 t paprika
On Cooking Day
  • 2 avocados
  • 12 flour tortillas or corn if desired
  • 1/2 C salsa
  • 1 bag tortilla chips

Instructions

To Assemble
  1. Chop salmon, peppers and onion into strips, rough chop cilantro and add to large zipper bag.
  2. Add next 7 ingredients to salmon and vegetables. Zip and shake well to mix.
To Cook
  1. Pour salmon mixture onto large rimmed baking sheet sprayed with non stick spray.
  2. Bake in a 425 degree oven for 8-12 minutes or until salmon is cooked through.
  3. Serve with flour tortillas, avocado, chips and salsa.

*best cooked on day 1 or 2.   Can sub bite size pieces of chicken instead of salmon.
